Noon Paneer


Last night I'm afraid I messed up our adventuring plans to visit a local winery for the second week in a row, but instead of wollowing in defeat, we decided to make the best of it!

Thinking of the wine, I got a craving for bread and cheese, something tasting light but lending itself to be gorged upon.

My cravings lead me to noon paneer, a popular Iranian appetizer. It means "bread and cheese" and it's possibly the most simplistic and delicious thing you've ever eaten!

Making this is super simple. If you have a Persian market near by to get some of the fancy stuff from, then by all means make the trip!



You will need:
Flat bread or pita bread
Green onions
Radishes
Herbs: taragon, mint, cilantro
Walnuts or pecans
Goat or feta cheese

Since we were hungry, we popped down to our local grocer and just got the basics. The traditional bread is like a thin tortilla, called lavash. However I prefer plump flat breads, similar to a pita but with out the pocket, so it all worked out well!

To make your spread, you'll want to gather your ingredients and do a simple prep.



If your working with a chunk of cheese rather than crumbles, slice the chunk both ways to get tall squares.



Then take the back of your knife and crush it like you would garlic.



Perfect crumbles!



Next take your onions and cut it in lengths. I cut mine a bit shorter, but you could really cut them into thirds to fit the size of your breads. The idea here is to have one long strip of onion to munch on.





Take your blushing radishes (a boyfriend favorite) and quarter them.





Pluck some springs of cilantro or whatever herbs you're using (am I the only one who pronounces it as "hhherbs" and not "erbs"?). Don't be afraid to leave the stem as we want it all intact, not like a Mexican taco where it's all chopped up and sprinkled on top.



Take your nuts and give them a lazy chop into smaller pieces. Halved walnuts are acceptable, but I prefer even smaller chunks.



Lastly, warm up your bread so it's soft and fold-able.



Pile your ingredients onto your serving dish, grab your bread, and pour some wine!



Now you're all 'bready' to eat! (insert wheezing knee slap here)



Take some cheese and smear it onto the base of your bread.



Or you can try the traditional 'pinch' method if your'e feeling extra fancy.





Lay down your onions and garnish with herbs.



Lastly, pop on your radishes and nuts.



Don't forget the wine!

My man added his culinary skills to the table with a cheese board of Gouda and Swiss, because,
without a doubt, the more cheese the better!

Definitely give this a go for pick-nicks or as an appetizer. It's easy and soooooo delicious!
You'll be the star of the party! Or if you're any sort of crazy like me, scarf it down for dinner.





We sat and watched the sun go down and then scampered off to the sauna.


Not a bad come-back date if I do say so myself!
